Special Grade Agar Sticks (2 sticks)
いよいよ12月5日に天出し作業が始まりました。左の画像はほぼ出来上がり状態の棒寒天です。生の状態の寒天を屋外で天日にさらし、昼夜の寒暖差を利用して棒寒天を作ってゆきます。凍ったり溶けたり…まさに天然のフリーズドライですね! 力仕事を物ともせず、きびきびと動き回る職人さんにはいつも感服させられます。この青いふちの箱は「もろぶた」というのですが、これを何段にも重ねて運ぶ様はいつみても圧巻です。
The work of putting the agar out to the sky finally began on December 5th. The image on the left shows the almost finished agar sticks. The raw agar is exposed to the sun outdoors, and the temperature difference between day and night is used to make the agar sticks. Freezing and melting...it's truly natural freeze-drying! I'm always impressed by the craftsmen who move around briskly, seemingly unfazed by physical labor. These blue-rimmed boxes are called "morobuta," and the sight of them being stacked and transported is always a spectacular sight.
