The juice is pressed from fresh, hand-picked grapes in the early morning, and then allowed to settle. After a week of alcoholic fermentation with wild yeasts in stainless steel tanks, the wine is then transferred to 450L French oak barrels. Malolactic fermentation then takes place spontaneously during the 12-month aging period. Bâtonnage takes place every two weeks. This Chardonnay, crafted by Philippe Colin, is Burgundy-style, with complex, fresh, and woody notes. Subtle oak aromas give this wine a luxurious mouthfeel. Overlooking the majestic Klein-Drakenstein mountain range, this boutique winery is nestled on the gentle slopes of the Wemershoek mountain range, surrounded by the shrublands and wildlife habitats of the Franschhoek wetlands, and bounded by low sandstone ridges to the north and south. The surrounding mountain ranges create a funnel-like topography, allowing winds to blow down and collect grapes in the vineyards, cooling them for uniform ripening and resulting in exceptionally elegant wines. The soil is sandy, derived from sandstone and quartzite from Table Mountain overlooking the Atlantic Ocean. A thorough soil analysis conducted in 1998 determined the optimal variety and clone for each block, and planting was carried out. The winery utilizes a sophisticated sorting line, capable of processing approximately 64 tons of grapes, to select the highest quality grapes. The selected grapes are then transferred to satellite tanks via a gravity system and transferred to fermentation tanks for further aging.
